Realizing there is a better way...
Problem: Kitchen Partners were developing a series of Home Meal Replacements (HMR) finished product applications for various Canadian retail customers. However, in trying to use a raw diced beef they began to realize that the process & product integrity would not work for the finished items. The beef took too long to cook and it could not pass through their existing equipment (vaned vacuum depositor)
Solution: Cardinal developed a firmer cut of beef that would pass through Kitchen Partner’s depositor with little impact to the cube integrity of the fully cooked Safe Sous Vide™ beef. The product has been implemented across Canada and is a favourite in various national HMR grocer applications.
